Recipe: Mini Breakfast Apple Crumbles

First of all, sorry I haven't blogged since last Friday. I moved house last week and my wifi is still not connected. Plus my phone froze so its in the repair shop and I am using a phone with no internet that's about ten years old. Having said that, I think I needed this quiet time as I have been so busy the last few weeks so maybe my technology issues are a blessing in disguise.So here I am in my parents house, writing up this recipe which I made this morning.

Crumble is one of my complete ‘go to’ winter desserts. It tastes so comforting and warming making it perfect for the colder months. When I saw apples featured on this week’s www.Foodcloud.ie #ToTheLastBite campaign (which aims to reduce household food waste) I immediately thought of making an apple crumble with a breakfast twist. I know most of us don’t have the time or urge to make a crumble first thing in the morning so the idea with this crumble is that you make it in advance (it takes about 15 minutes prep) and then store it in the fridge for morning time.

This recipe makes about four servings so I put it in individual little jars and the idea is to grab one first thing each morning and top it with a little yogurt (my favourite is coconut yogurt). If you don’t like it too cold, take it out of the fridge the night before and leave it on the work top. If you have a sweet tooth, add a tablespoon of maple syrup or honey to the apples when stewing them.

As this is a #ToTheLastBite recipe, I really wanted to keep the ingredients simple that are in most kitchen cupboards. This is to avoid, you having to go buy expensive or additional ingredients in order to make these recipes. If you don’t have cinnamon or vanilla extract in the cupboard just leave these out. They mightn’t be as flavoursome but they will still be tasty.

So if you have some apples that are about to turn bad, why not give this recipe a go. P.S. there is nothing to stop you eating these for desserts.


Ingredients:

4 red apples

1 teaspoon of cinnamon

1 cup of chopped almonds

1 cup of oats

¼ cup of melted coconut oil

1 tablespoon of maple syrup / honey

1 teaspoon of vanilla extract.

Pinch of sea salt

½ cup raisins

Method:

1. To make the stewed apple, peel the apples and remove the core. Slice into thin pieces. Place in a saucepan with a teaspoon of cinnamon and barely cover the slices of apple with boiling water (about a centimetre in depth). Bring to the boil and reduce heat and allow to stew for about ten minutes until the apples are soft. Drain off the water when cooked.

2. To make the crumble, melt the coconut oil and add to a bowl with the chopped almonds, oats, maple syrup/honey, vanilla extract and sea salt. Mix well and spread on a baking tray lined with parchment paper. Place in the oven at gas mark 4/180 degrees celsius for 15 minutes. Remove from the oven and sprinkle the raisins on top of the granola crumble.

3. Once the apple and crumble has cooled, assemble the individual pots. Spoon the stewed apples into the base of four jars. Top with the crumble. Place in the fridge until ready to eat.

4. When serving, top with coconut yogurt and enjoy x.
