Recipe: Homemade Granola

Granola is one of these things that is so handy to have in the cupboard. I use it at breakfast time to add flavour and texture to my porridge, I use it to make yummy desserts and I eat it straight out of the jar as a snack. The only problem is that I don't know when to stop and I end up scoffing the entire jar. Lots of store bought granolas are very processed and loaded with added sugar. But thankfully things are changing on this front. Over the last few months, I have noticed lots of new brands of granola in grocery stores which are much less processed and contain only natural sweeteners. This is such good news for everyone. These granolas are really delicious and a much better choice than some of the other cereals on supermarket shelfs. One of my favourite of these new age granolas is the Happy Pear granola and on weeks when I am really busy I sometimes pick up a tub of the Happy Pear granola instead of making my own. However, my definite preference is still to make my own as I know exactly what ingredients go into it and how it is made and also it works out much cheaper to make in the long run than to buy one of the healthier brands available.
This evening, I made myself a batch to keep me going at breakfast time for the next week or so. I also used it this evening to make one of my favourite summer desserts, the recipe for which I promise to put up on the blog tomorrow so watch this space.
I just have one more thing to say about this granola. Buying the ingredients all in one go at the outset can seem quite expensive, but just remember that you can use them to make lots of batches of this delicious granola and so they are quite good value in the long run.

Ingredients:
3 tablespoons of coconut oil
2 tablespoons of honey
2 cups of gluten free oats
1/2 cup of almonds
1 cup of mixed seeds (e.g. pumpkin, sesame, sunflower)
1/2 cup raisins
1/2 cup of flaxseed meal
1/2 cup of goji berries
1 teaspoons of cinnamon
Pinch of sea salt
Method:
Preheat the oven to 180 degress celsius / gas mark 4.
Heat the coconut oil and honey over a medium heat until it is quite liquid.
Mix all of the dry ingredients in a bowl together.
Add the coconut oil and honey and stir well
Line a baking tray with baking paper and spread the mixture evenly over the tray. Make sure it is not to squashed. You might need to use two trays.
Place in the oven for about 20 minutes, keeping an eye on it to make sure it doesn't burn.
Allow to cool and store in a glass jar.
