It's another scorching day here in Kilkenny. What a great way to start our four day work week. I've set up a mini office outside: close enough to the house to get a decent wifi signal and a little in the shade so I don't have to squint at my laptop screen. My excuse to work al fresco was that I could do with the Vitmin D, but I got my bloods done recently and it turns out I have well above average Vitamin D levels (yah), so now I say no excuse is needed. This is literally the quickest blog post I've done in ages. I've just finished my dinner and I thought that it would be a good time to round up my go-to summer recipes.
Summer time is the best time to broaden our eating horizons. There are so many great fruits and vegetables in season and everything tastes a millon times nicer when you can eat it outside in the sunshine. I'm totally banking on this weather continuing here in Ireland and I think if we call collectively visualise hot weather and al fresco dining, it's bound to happen. So in that spirit I'm sharing seven of my favourite summer recipes that will set you on your way to eating well all summer long.

Baked Sweet Potatoes with Fried Black Beans, Avocado, Cashew Cream and Salsa... basically a sweet potato dream situation.
