Cool down with this Nectarine, Ginger & Mint Crush Mocktail!

Nothing says summer like sipping an ice cold cocktail in the sunshine. But spare a thought for non-drinkers, drivers and pregnant women. While partial to the odd glass of wine or G&T myself, I hate when the only non-alcoholic options on offer are water or fizzy sodas; water I drink all day long at home and fizzy soda I avoid. While I can't control the mocktail offerings in bars, I can come up with a refreshing non-alcoholic mocktail to have at home, that is also low in sugar.
This Nectarine, Ginger & Mint Crush mocktail was born yesterday afternoon out of an abundance of ripe nectarines in the fruit bowl, the warm weather and a craving for something zingy and refreshing. Coconut water and a generous serving of ice provide a refreshing liquid base. Blended nectarines provide sweetness without the need to resort to refined sugars or syrups. And lastly ginger and mint add zing and interest; and who doesn't need more zing and interest?!
This is the perfect drink for hosting a soiree that includes guests who prefer not to drink alcohol. And don't worry for any guests who are more cocktail than mocktail kind of people, adding a few shots of vodka to this drink, works very well indeed.​
Ingredients
2 cups coconut water
2 nectarines, destoned and chopped
1 cup ice
1/4 cup fresh mint leaves
1 tsp minced ginger
To serve:
1 cup of ice
2 sprigs of fresh mint
Method
Place the coconut water, nectarines, 1 cup of ice, the 1/4 cup of mint leaves and the ginger in a blender and blend until smooth.
Fill two tall glasses with 1/2 cup of ice each and pour the drink over. Serve with a straw and a sprig of mint in each glass.
