Recipe: Chocolate Orange Chia Pudding with Orange Blossom Cream

Who loves chocolate orange? I am a big fan of this flavour combination and if, like me, you are lookng for healthy dessert recipes that aren't all about the sugar than I think this may be the recipe for you. This dessert isn't just not bad for you. It's actually good for you. It contains chia seeds, raw cacao, almond milk, oranges and no refined or overly processed ingredients. That means healthy omega 3 fats, fibre, protein, anti oxidants and vitamin C plus lots more.

Lots of people ask me how to use chia seeds with most people sprinkling them over porridge or adding a tablespoon or two to their smoothie - both really good ways to include them in our diets. But there are so many other things you can do with these little nutritional powerhouses. Chia pudding is one of my favourite dishes and the good news is that chia pudding is not just for breakfast. It is a really good option for dessert too.

For today's recipe I have added raw cacao and the juice of an orange to the chia pudding to provide the chocolate orange flavour. The orange juice will provide a certain level of sweetness but if you have an extra sweet tooth add a teaspoon of maple syrup or honey when making the chia pudding.

This recipe makes two large desserts or four smaller desserts.

Ingredients:

For the chia pudding

1 and a half cups of almond milk

A quarter cup of chia seeds

1 tablespoon of raw cacao powder

1/2 teaspoon of vanilla extract

Juice of an orange

1 teaspoon of maples syrup or honey (optional)

To serve

A third of a cup of coconut cream

Half a teaspoon of orange blossom water (optional)

1 orange, peeled and cut into segments.


Method:

1. Mix the almond milk, chia seeds, raw cacao, vanilla extract and sweetener together in a bowl. Use a fork or a whisk to do this as it's important that the seeds don't clump together. Place in the fridge for at least six hours to allow the chia seeds to soak up the liquid. After the first hour, give the mixture a good stir, just to be doubly sure no seeds have clumped together.

2. Before serving, make the orange blossom cream by putting the coconut cream and orange blossom water in a bowl and whisking well.

3. Place the orange segments in a small pan over a medium heat and fry them for about five minutes making sure to turn them regularly so they don't stick. Cut them into smaller pieces as this makes them easier to eat with the chia pudding.

4. To assemble the dessert, spoon the chocolate chia pudding into the bottom of two serving glasses, spoon the coconut cream on top and top with the orange segements and a sprinkling of raw cacao powder or cacao nibs.
