Recipe: Coriander & Jalapeno Guacamole

Avocados are just amazing. From making chocolate mousse, to adding creaminess to smoothies, to tossing through salads and, best of all, to making delicious guacamole. Today's recipe is super simple but really delicious. It is creamy and flavoursome making it a great side to lots of different meals. Have it with toasted rye bread, on top of flax crackers, dolloped over your salad or as a dip for sweet potato fries.
Now for the goodness. Avocados are rich in heart healthy monounsaturated fat and are a good source of fibre, potassium, vitamin A, vitamin C and folate. The coriander leaves add a really fresh flavour to this guacamole. But as coriander leaves have quite a strong flavour you may wish to reduce the amount to suit your own taste buds. Likewise the jalapeno peppers add heat (which I love), so you can alter the amount you add depending on how hot you like it.
Ingredients:
2 ripe avocados
A good handful of coriander leaves
1 tablespoon of jalapeno peppers
A tablespoon of extra virgin olive oil
Juice of a lime
Sea salt and black pepper
Method:
Place all of the ingredients in a food processor and blend until smooth.
Serve immediately.
