Recipe: Date, Cashew Butter and Blueberry Smoothie

I am really busy the last few days getting ready for Savour Kilkenny and just wanted to have something really tasty and indulgent this morning. Also I have been drinking lots of green juice lately, so know I am getting lots of leafy greens so I didn't mind not having a green smoothie this morning. Dates have a medium glycemic load so I am definitely conscious of the amount I eat and usually don't put them in smoothies. They do add a lovely sweetness to the smoothie and sometimes you just need a little sweetness in the morning. I used water in this smoothie as I felt the cashew butter and banana added enough creaminess. Speaking of cashew butter, it is wonderfully creamy and I think a complete cupboard essential. I use it or almond butter all the time, even making savoury dressings and sauces. The blueberries add antioxidants to this smoothie, needed for fighting free radicals which damage our cells and also for preventing premature ageing.

Ingredients:
1 and a half cups of water
4 dates, pitted
Half a banana
2 tablespoons of cashew nut butter
Half cup of blueberries
Method:
Put all the ingredients in a blender and blend until smooth. Serve immediately or keep in the fridge in an airtight glass container for up to three days.
