Recipe: Tomato, Cucumber and Red Onion Salad with a Coriander Dressing

For lunch today, I took some of my courgette, red chilli and coconut soup from the freezer and I am going to have it with some homemade flaxseed crackers and today's recipe, a tomato, cucumber and red onion salad with a coriander dressing. This salad is simple and fresh and works really well as a side to most dishes. As it is light and summery, I am hoping that it will make me forget about the pouring rain outside for at least a little while anyway.


Ingredients:

2 cups of heirloom tomatoes, quartered

1 cup of diced cucumber

1 cup of diced red onion

1/2 cup of coriander leaves

Juice of half a lime

1 clove of garlic

2 tablespoon of extra virgin olive Oil

1 teaspoon of apple cider vinegar

Method:

1. Place the quartered tomatoes, diced cucumber and diced red onion in a bowl and toss.

2. To make the dressing, place the coriander, lime juice, garlic, olive oil, apple cider vinegar and salt in a food processor and pulse until the ingredients have combined into a dressing.

3. Add the dressing to the tomato, cucumber and red onion and toss to combine.

4. Serve immediately or store in the fridge in an airtight container for up to two days.
