Recipe: Watermelon and Kaffir Lime Smoothie

This Friday's smoothie recipe screams summer. I picked up an organic watermelon yesterday and decided I would use it as the main ingredient for this week's smoothie. Watermelon has a high water content and so is a great thirst quenching food. It's perfect chopped into wedges and eaten on its own. It's also great combined with foods such as coconut, mint, banana, blueberries, strawberries, lemon and lime.
I usually have dried kaffir lime leaves in my cupboard for making thai green curry paste and have never used them otherwise up until now. I have heard of kaffir lime leaves being used with coconut in panna cotta and even with watermelon to make vodka watermelon, but was a little unsure about how they would work in a smoothie.
Often when kaffir leaves are used in food the leaf is used whole and removed just before eating. It is really only eaten when it is sliced very thinly or blended into a paste - or in this case a smoothie. They give a really nice lemon/lime flavour but different to what you get from actual lime juice or zest. It's hard to describe the flavour so best to try for yourself.

Ingredients:
1 cup of chopped watermelon
2 dried kaffir lime leave
1/2 banana
1 cup of coconut milk
5-6 mint leaves
Method:
Add all the ingredients to a blender and blend until smooth. Perfect served over ice.
