Recipe: Refreshing Green Smoothie with Cardamon, Lime and Strawberry

The weather in Ireland is so muggy at the moment. It's very cloudy and overcast but still quite warm. I often find it very hard to quench my thirst in this weather and to find something refreshing and light to drink. Besides water, most store bought drinks that are marketed as thirst quenchers contain sugars and additives which are best avoided in my eyes. Water of course is the ultimate thirst quencher, but sometimes you want something a little more exciting. So hopefully that's where this smoothies comes in. It contains lime, strawberries, cardamon, spinach, coconut water and coconut milk. How good is it when you get a smoothie that contains greens but doesn't taste 'green'?!

I usually use cardamon in Indian cooking but I have read so much about its medicinal benefits from helping with digestive problems and oral health, to its diuretic properties, to being anti inflammatory, to helping with depression. It's even supposed to be a natural aphrodisiac – so adding cardamon to your smoothie can make for very happy mornings all round ;)


Ingredients:

1 cup of coconut water

1 cup of coconut milk

1 cup of spinach

1 cup of strawberries

Juice of 1/2 a lime

2 cardamon pods

Method:

Put all of the ingredients in a blender and blend until smooth. Best served immediately but this will keep for a day or so in the fridge.
