Recipe: Blackcurrant and Banana Ice-Cream

Happy weekend!! I made this ice-cream today with the intention of photographing it and blogging about it tomorrow, but I was so excited I couldn't wait and had to share it straight away. This might be the nicest dessert I have made to date... It tastes divine! I know I am really bigging it up and not being very modest at all, but it's quite exciting to be able to eat ice-cream that is free from dairy, refined sugar and artificial ingredients. I really really hope you try this recipe out for yourselves. I know I keep saying this about lots of the recipes on the blog, but this one is also really easy to make.
Standard ice-cream is a 'no no' for me as it is a mixture of dairy and refined sugar, two things I try to avoid as much as possible. This version is so much tastier and with it containing no dairy or processed ingredients, eating the whole tub at once is a really good option!! As I write this, I am thinking that a lemon biscuit would be the perfect accompaniment to this icecream, so I must get working on that soon. In the meantime please try making this.. there are blackcurrants everywhere at the moment so it would be rude not to put them to good use.
Just a little word of caution - you will need a powerful enough blender for this one so just be careful if you have an old or weak enough blender.

Ingredients:
3 bananas
1 cup of blackcurrants
1 tin of full fat coconut milk
2 teaspoons of honey
Method:
1. Peel the bananas and thinly slice them. Place the sliced bananas and the blackcurrants in a freezer bag and place in the freezer overnight. Place the tin of coconut milk in the fridge overnight too.
2. Once the bananas and blackcurrants are frozen, you can make the ice-cream. Place the frozen bananas, frozen berries and honey in a blender. When you remove the tin of coconut milk from the fridge and open it, it will have separated into a hard cream and water. Add the cream part to the blender and discard the water.
3. Blend the ingredients together, starting out on a slow speed and working up to a fast speed to ensure the mixture gets fully blended and nice and ice-creamy.
4. To serve, top with grated almond and some fresh blackcurrants.
Serve immediately or transfer to a freezer container and freeze for when you are in need of a delicious cool treat.
