Recipe: Blueberry 'Rehydrating' Breakfast Smoothie

This is a really good smoothie for anyone feeling a little dehydrated or thirsty. The combination of banana and coconut water is ideal for rehydrating your body and restoring electrolytes. The oats provide slow release energy making the smoothie filling and perfect for breakfast time. I try to eat lots of blueberries as they are little powerhouses of anti-oxidants which are essential for fighting damage caused by free radicals, such as ill health and premature ageing. Plus they taste so so good.

I use coconut water instead of normal filtered water as it tastes so delicious with the blueberries and lime. When chosing a brand of coconut water, avoid ones that contain added sugars and flavourings as these are pretty much akin to a sugary soda. Chose brands that are 100% coconut water with no additives. A well known brand of carton smoothies has recently added carton coconut water to it's range. The good news is that it is 100% coconut water and doesn't contain additives such as concentrates and sweeteners. The more brands follow suit the better as more competition means more choice for us consumers and reduced prices. At the moment a one litre carton of coconut water costs around €4.50 which is not cheap. However, here at the Honest Project, I am always keen to bring you ways to eat healthy on a budget and the good news is that Innocent Coconut water is currently on special offer in Dunnes Stores for €3 a carton. I have stocked up as I am not sure how long this offer will continue. If anyone knows of any other special offers, it would be great if you could post them in the comments section below.
Of course, normal filtered water is just as effective as coconut water for keeping you hydrated so there is no issue with using it instead of coconut water in this recipe.

Ingredients:
1 cup of blueberries
1 and a half cups of coconut water
1 cup of oats
1/2 a banana
Juice from half a lime
Method:
Add all of the ingredients to a blender and blend until the ingredients have broken down and you have a smooth liquid. Best served immediately but it will keep in the fridge for about a day.
