Recipe: Strawberry 'No Dairy' Milk

I put a picture up on Instagram a couple of weeks ago of two jars of strawberry milk I had just made. Since then, lots of my friends and visitors to the blog have asked me for the recipe so they can make it for their kids. As write this post, I have just realised that I am doing yet another post about strawberries. Honestly, after this post, I am done with strawberries for a while (promise).
Strawberry milk is so yum. Most of us are probably familiar with well know brands of strawberry milk available from supermarkets. For me, the problem with these brands is that they are usually highly processed and contain cow's milk and refined sugars. Not good for any of us and especially not good for children, the very people who love these types of drinks.
Making your own strawberry milk is really easy and very quick. The one thing to say is that it will work out more expensive than buying the pre-made brands available in supermarkets. The first time I made strawberry milk, I just blended strawberries with nut milk from a carton. However, I found that it was too liquidy (if that makes sense) and I wanted a thicker consistency. This recipe achieves that by using coconut yogurt and coconut cream (made from a tin of coconut milk). Of course, if you prefer a less thick consistency, blending strawberries and regular nut milk will work for you.
Ingredients:
1 carton of plain Coyo coconut yogurt
2 cups of strawberries
1 tin of coconut milk (full fat) OR 1 cup of coconut milk from a carton*
*by using the tin of coconut milk, a creamier texture is achieved
Method:
If using tinned coconut milk, put the tin of coconut milk in the fridge for at least six hours. When you remove it and open it, the coconut milk will have hardened, leaving a liquid residue. Scoop out the hard coconut milk and discard the liquid residue.
Place the hardened coconut milk (or the cup of coconut milk, if using coconut milk from a carton), the yogurt and the strawberries in a blender and blend until well combined.
Store in glass bottles or jars in the fridge.
It will keep for 3-4 days in the fridge.
