Recipe: Energy balls

It seems the whole world is going energy ball crazy and I love it. They are the perfect sweet hit to accompany an afternoon cup of herbal tea or to have after dinner instead of a traditional dessert. This is my take on the alternative healthy treat and I call them bliss balls. I cannot stress how easy these are to make. The recipe is flexible and doesn't have to be followed exactly, so you can vary it to suit your taste buds. You can add a little maple syrup for sweetness but I find the dates make them sweet enough. Medjool dates are worth using for the flavour and consistency.
Ingredients
1 cup of almonds
1 cup of medjool dates (pitted)
1 tablespoon of raw cacao
2 tablespoon of chia seeds
1 tablespoon of coconut oil
1 tablespoon of almond butter
Optional flavouring – Zest of one orange or a 1/2 teaspoon of mint extract
Method
Grind the amounds by blitzing them in a food processor for about 90 seconds.
Add the rest of the ingredients and blitz them for about 90 seconds until they are combined.
Roll the mixture into little balls and put in the freezer for an hour.
Store in the fridge and enjoy.

Once you taste these little balls of bliss, I think it will be so much easier for you to reach for one of these when a sweet craving kicks in instead of a sugary biscuit or bar of chocolate. They are a perfect afternoon treat along with a cup of herbal tea.
