FIVE EASY NON ALCOHOLIC SUMMER DRINKS



With sunshine comes cravings for ALL the drinks so I've rounded up five of my favourite Honest Project non alchocolic summer drinks. All of them are pretty healthy, will help with the rehydration efforts and I've included one that contains my beloved coffee. I'm on a search for tastier options than the usual non-alchocolic alternatives. I'm not a teetotallar or anything like that and love a cool glass of wine, but horrendous hang overs have me opting for non-alcoholic options more and more. The selection is pretty crap a lot of time... basically fizzy drinks or water, so I'm all for coming up with tasty options at least when I can make them myself.Keep scrolling for five easy non alcoholic summer drinks recipes.... and the best thing about them? You can drink as much as you like xxFirst up, is this citrusy non-alcoholic version of a sangria. This is so simple, I'd hardly even call it a recipe. Just slice up; your fruit into wedges and add it to a jug along with a generous amount of ice cubes. Top with a mixture of pure orange juice and sparkling water.

PS: If you want to add a drop of prosecco, knock yourself out.


Citrus 'Sangria'

(serves 6-8)

Ingredients

1 pinkgrapefruit

2 oranges

2 limes

1 litre of pure orange juice

1 litre sparkling water

Ice

Method

Cut the grapefruit, oranges and limes into quarter slices. Place in the botto of a large jug. Pour half a litre of orange juice and half a litre of sparkling water into the jug and add ice.

Top up with more orange juice and sparkling water as required.

Mint & Lime Green Juice

Next up, is juice that't bordering on the healthier side of healthy. This Mint & Lime Green Juice is perfect for anyone who is new to juicing as the generous amount of mint and lime gives it a little bit of a mojito vibe in the taste department.

Mint & Lime Green Juice

(serves 2)

Ingredients

1 cucumber

2 large handfuls of baby spinach leaves

2 limes

1 small handful of mint leaves

Method

Wash and chop your cucumber and limes into small size pieces that will fit through your juicer. Slowly feed the ingredients through your juices, starting with the cumcumber, then the spinach, next the mint and finally the lime. Let your juicer run for a sixty seconds to allow as much juice as possible drip through.

Add a ice cubes to two glasses and pour the juice over the ice. Drink immediately.

Nectarine, Ginger & Mint Crush Mocktail

I adore this drink. Nectarine, ginger and mint - tick, tick, tick. It's made with coconut water, which let's be honest is probably the most thrist quenching thing you can possibly drink. Please excuse the straw in the picture - it's an old picture from when I still used them. Now, we're a straw-free household, and not before time.

Nectarine, Ginger & Mint Crush Mocktail

(Serves 2)

Ingredients

2 cups coconut water

2 nectarines, destoned and chopped

1 cup ice

1/4 cup fresh mint leaves

1 tsp minced ginger

To serve:

1 cup of ice

2 sprigs of fresh mint

Method

Place the coconut water, nectarines, 1 cup of ice, the 1/4 cup of mint leaves and the ginger in a blender and blend until smooth.

Fill two tall glasses with 1/2 cup of ice each and pour the drink over. Serve with a straw and a sprig of mint in each glass.

Ginger Lemonade

I made this last week when temperatures were hitting 30C here in Kilkenny. Craving something zingy and cold, this hit the spot nicely. I don't have a sweet tooth so I went easy on the sugar, but add a little more if you like your lemonade more on the sweet side.

Ginger Lemonade

(serves 6-8)

Ingredients

½ cup coconut sugar

½ cup water

3 lemons

½ inch thumb of fresh ginger

Sparkling water

Ice

Method

Start by making the syrup. Place the coconut sugar, water, the zest of the three lemons and the finely grated ginger in a saucepan. Heat over a medium heat constantly stirring until it comes to the boil. Allow it to boil for two minutes before removing it from the heat. Set it aside to cool.

Once cooled, drain it though a fine sieve to remove the lemon zest and ginger pieces. Add the juice of the three lemons to the syrup.

When ready to serve, add ice cubes to a jug and then add your ginger and lemon syrup. Top up with sparkling water. Use as much or as little sparkling water as you wish, depending on how concentrated you would like your lemonade. Serve immediately or store in a glass bottle in the fridge.

Iced Almond Milk Coffee

How could I do this post without mentioning my beloved iced coffee. The perfect way to enjoy our favourite pick me up in the sunshine. Mind you, I still enjoy a regular Americano too, so really I'm just doubling up on the caffeine hit. How bad!

Iced Almond Milk Coffee

(serves 2)

Ingredients

2 cups of cold coffee*

2 cups of almond milk

8 ice cubes

2 tsp of maple syrup (optional)

Method

Add generous helping of ice cubes to two long glasses.

Pour the cold coffee over the ice cubes and add the almond milk.

Sweeten with maple syrup if desired.
