
Happy Monday! With temperatures set to soar in Ireland this week, today's recipe is the perfect sunny day dessert. In truth, it's not so much a recipe as it is an idea for combining a few simple ingredients and coming up with something really tasty and refreshing. I often think the best dishes, are those where there are only a small number of ingredients and minimal messing with them. For today's recipe, take a selection of berries, add some lime zest and juice, a drizzle of maple syrup and some freshly chopped mint. Cover and pop in the fridge for a few hours to let all the flavours combine and intensify and voilà , there you have it, the simplest dessert that tastes really yum and isn't packed with sugar. Serve on it's own, or with ice-cream, cream or yogurt.
PS: For something a bit boozy, add a spoon of the berry mixture to the bottom of a glass and top with your favourite sparkling wine.
Serves 4.
Ingredients
4 cupfuls of berries, e.g. raspberries, strawberries, blackberries.
Zest of 1 lime
Juice of 1 lime
3 tbsp maple syrup
Small handful of mint leaves, finely chopped
Method
Wash the berries and half or quarter them, depending on how large they are. Place them in a bowl with the rest of the ingredients. Toss gently and place in the fridge for a couple of hours before serving.
Serve on their own or with a dollop of yogurt, cream or ice-cream.
