ICED ALMOND MILK COFFEE

This week has seen us enjoying a much needed spell of warm sunny weather and this equals one thing; cool refreshing drinks in the sunshine. It's this sunny spell of weather that inspired today's recipe. Actually, this isn't so much a recipe as it is an idea to combine your daily caffeine fix with a refreshing drink; perfect for this warm weather.

Iced coffees are nothing new, but I think many of us tend to buy them in coffee shops as a treat as opposed to making them ourselves at home. However, there are two reasons why I switched this up and now much prefer to make mine at home. Firstly, I can control the amount of sugar that goes into them (remember that scary report a few months back about the amount of sugar in our coffee drinks - gulp) and secondly, making them at home is so much cheaper than buying them out! I make my iced coffee using a nespresso machine and allowing the coffee to cool but instant coffee or cold brewed coffee work really well too.

Remember ice cubes are essential for this recipe, so fill your ice cube trays and pop them in the freezer straight away. You will have ice just in time for your mid-morning coffee fix.

Ingredients

2 cups of cold coffee*

2 cups of almond milk

8 ice cubes

2 tsp of maple syrup (optional)

*1 cup = 250 ml

Method

1. Add generous helping of ice cubes to two long glasses.

2. Pour the cold coffee over the ice cubes and add the almond milk.

3. Sweeten with maple syrup if desired.
