Recipe: White Chocolate and Lime Fudge

White chocolate fudge is so easy to make; just melt cacao butter, cashew nut butter and maple syrup over a low heat, stirring to combine. Add a pinch of sea salt and there you have it; delicious white chocolate fudge that is both creamy and indulgent. Today's recipe is for just that, with the addition of lime juice and zest to brighten up this fudge and give it a summer kick.
When it comes to satisfying chocolate and sugar cravings, I find that a little square of homemade chocolate or fudge does the trick in a way that store bought or processed chocolate never seems to do. The ingredients for this recipe means it is quite expensive to make, so it's probably not suitable for making every week or for a large family. I make it every couple of weeks and keep it in the freezer for when a chocolate craving hits and as a small amount is plenty enough to feel satisfied, one batch lasts for ages.
Ingredients
1 cup of cacao butter
1 cup cashew nut butter
3 tbsp maple syrup
Pinch of sea salt
2 tbsp lime juice
2 tbsp lime zest
Method
1. Line a small baking dish with parchment paper.
2. Add the cacao butter to a saucepan and heat gently to melt.
3. Once the cacao butter is melted, add the cashew nut butter and maple syrup and continue to heat gently, stirring constantly as the cashew nut butter melts and the mixture is combined.
4. Add a pinch of sea salt, the lime juice and one tablespoon of lime zest. Stir well.
5. Pour the mixture into the lined baking dish and sprinkle the remaining lime zest on top. Place in the freezer to set.
4. Once set, break into small pieces. Keep in either the freezer for hard fudge or the fridge for softer fudge.
