Recipe: Raw Lemon & Cashew Bon Bons

A weekend treat that's easy to make and doesn't require lots of ingredients?? Yes please :) These raw lemon and cashew bon bons fit the bill perfectly. They will take you five minutes max to make and you only need five ingredients; cashew nuts, a lemon, dates, vanilla extract and a pinch of salt. Perfect for occasions when you might not have a well stocked cupboard.
I am a big fan of lemons, adding lemon juice to juices, salad dressings, curries, pasta sauces and desserts; the list is endless. Gone are the days when I went shopping and bought one or two lemons, now I buy about eight at any one time. If you are like me and like zesty flavours you will love these. This recipe makes ten bon bons.
Ingredients:
1 cup of raw cashew nuts
1 cup of pitted dates
Zest of a lemon
Juice of half a lemon
Half a tsp of vanilla extract
Pinch of sea salt.
Method:
1. Add the cashew nuts to a food processor and pulse a few times until broken down into chopped cashew nuts. Don't pulse them into a powder.
2. Add the remaining ingredients and process until smooth. If using dry dates, soak them in hot water for 30 minutes before using.
3. Roll into little balls and place in a container in the freezer for an hour. They can be kept in the freezer and eaten from there if you like a firm consistency. If you like a more gooey consistency, remove them from the freezer once set and keep them in the fridge.
