Recipe: Five Green Recipes to Celebrate St. Patrick's Day

Hi folks. Here at the Honest Project, we (and by we, I mean Coco, Teddy and I) are going to celebrate St. Patrick's Day (in the not so well known fashion) by eating green vegetables for the day. If this sounds more fun than the usual parade and few pints, here are some of my favourite green recipes for you to try. From breakfast to lunch to dinner, I have you covered with tasty 'green' recipes. I even have a dessert for you made with one of my favourite green foods.

Disclaimer (this is the Honest Project afterall): I may have a little celebratory glass of vino to mark the day. But, that's made with green grapes, right?!

1. 'Eat Your Greens' Smoothie.

Start your day with a green juice or smoothie to get your fix of raw green vegetables first thing in the morning. That means lots of vitmains, minerals and enzymes to set you up for the day. If you are looking for smoothie inspiration, try my 'Eat Your Greens' Smoothie. Recipe here.


2. Spring Pea Soup with a Mint Cashew Cream

Soup doesn't have to be reserved to Winter time. For spring and summer soups, chose light and seasonal ingredients like my Spring Pea Soup with Mint Cashew Cream. Now that the sun is shining, I crave summer flavours and this soup fits the bill perfectly. Recipe here:


3. Coriander and Jalapeno Guacamole

If you are feeling peckish in the afternoon, whip up a batch of Coriander and Jalapeno Guacamole to dip some celery and carrot sticks in. Perfect to keep you going until lunch time. But don't use all your avocados, as you need to save one for dessert. Recipe here.


4. Courgetti Arriabiata

What would St. Patrick's Day be without some spiraliser action?! Feast on Courgetti Arriabiata for dinner and feel very satisfied with yourself that you are eating more raw green vegetables. Recipe here.


5. Raw Chocolate & Cashew Butter Mousse

A dessert with a green vegetable in it?! Well it's actually a fruit but let's pretend it's a vegetable. Try this chocolate avocado mousse for dessert and feel really smug that you. Recipe here.
