Advice: Five Healthy Mother's Day Breakfast Recipes

It's Mother's Day on Sunday, so it's time to give moms a break and make them a delicious but healthy breakfast in bed. To help you, here are my five favourite breakfast in bed. Whether your mom loves pancakes, a hot breakfast, fruit, oats or sweet treats, we have you covered with these five recipes.

So happy cooking and before I forget, a big happy Mother's Day to my own mother and also a happy Mother's Day to all the moms who follow my blog.

1. Wholemeal Vegan Pancakes with Berries & Coconut Yoghurt

Pancakes in bed is the ultimate treat breakfast. These pancakes are really yummy and are made with spelt wholemeal flour and almond milk making them ideal for anyone trying to avoid white flour or dairy. The toppings are optional and can be mixed and matched with other ingredients. Make the batter the night before to save time in the morning.

2. Passionfruit Chia Parfait

This breakfast is a complete winner both nutrition wise and taste wise. I made this at the Savour Kilkenny Food Festival last October and I still have people telling me that they make it all the time. If you are not a fan of passionfruit, you can swap in another fruit. For example, raspberries work really well in this dish. The chia pudding part of this recipe is best made the night before.

3. Hazelnut & Banana Overnight Oats

This breakfast tastes so like nutella it is unreal. It's really indulgent but yet the only sweetness comes from the banana. Again this one can be made the night before, so you have no excuses not to make this for any nutella loving Moms out there.

4. Mini Breakfast Apple Crumbles

Dessert for breakfast? That can't be right; but yet it is so right when you taste these mini breakfast apple crumbles. The ingredients are so simple for this dish and there is nothing to stop you eating the leftovers for dessert. Top them with some yoghurt for extra creaminess; I love natural coconut yoghurt.

5. Smoky Baked Beans in Tomato Sauce

These smoky baked beans are one of my all time favourite recipes. They are so easy to make but are still full of flavour. This recipe is ideal for the mom who wants a hot breakfast. Pair them with avocado, hummus or toast for an energising breakfast.
