Recipe: Chocolate Dipped Strawberries

With Valentine's Day this weekend, what other recipe could I post today, than these chocolate coated strawberries. I love a good cliche and what better Valentine's Day cliche than chocolate and strawberries. When eaten, the hard chocolate shell melts in your mouth leaving you with the sweet cold strawberry underneath. And don't fret if you are not a big fan of romance, these can still be enjoyed by even the most unromantic among us.

Putting romance to one side, these are a great all year round treat and can satisfy chocolate cravings without having to resort to a store bought chocolate bar. They are also a good option to offer guests with drinks if entertaining. I think children would also really like these. They only take about five minutes to make and then about 20 minutes to set in the fridge.

For the chocolate, I use coconut oil, maple syrup, raw cacao and a little bit of cashew nut butter so that it isn't too intensly dark. If you prefer white chocolate to dark chocolate, just use the white chocolate recipe I use for my white chocolate fruit and nut bar.

Ingredients:

Large bowl of strawberries

2 tbsp raw cacao powder

2 tbsp maple syrup

2 tbsp coconut oil

1 tbsp cashew nut butter

Pinch of sea salt

Methods:

1. Wash the strawberries and set them aside. Don't cut off the green tops.

2. In a samll saucepan, whisk togethter the raw cacao powder, coconut oil, maple syrup and nut butter over a low heat. COntinue to whisk for a couple of minutes until the mixture is melted. Remove from the heat.

3. Dip the strawberries in the melted chocolate mixture, coating 2/3 of the strawberry with chocolate. Place on a plate lined with parchment paper. Place in the fridge to cool and allow the chocolate to set. Serve straight from the fridge.
