For many today is the first day back to normality after the Christmas break. If you are looking for some healthy eating inspiration why not give one (or all) of these recipes a go this week. A green smoothie for breakfast, no bake energy balls for your mid morning snack and vegetable pad thai or curry for dinner.

I am pretty obsessed with this green smoothie. The green comes from the spinach, the sweetness from the pineapple and the superfood element from the turmeric. Turmeric has long been known for its medicinal properties and I really try to eat some on a near daily basis. What easier way to eat it than by enjoying this smoothie first thing in the morning. These are complete winners and I like to have one along with a cup of tea or coffee as a mid morning snack. Kids seem to love these too so they are perfect for anyone looking for unprocessed treats for little ones. They are really easy to make and don't require any baking. Click here for the recipe.

We all know white carbs aren't the best for us with them being processed and causing our blood sugar to spike. I often use wholegrain versions of pasta, rice and noodles. But sometimes, I make spaggetti and noodles from courgettes using a gadget called a spiraliser. This vegetable pad thai is ideal when you want something low in refined carbs and high in vegetables. If you don't have a spiraliser, not too worry, just grate your courgette instead. Click here for the recipe.

If you want a warm and comforting dinner, this is the dish for you. You can swap out and add in different vegetables depending on your own preference. Also, you can make a large pot and keep the leftovers for the next day or freeze for a day when you just don't feel like cooking. Click here for the recipe.
