Recipe: Kale, Blueberry & Almond Milk Smoothie

Happy Friday folks. Friday means a new smoothie recipe on The Honest Project. My leafy green today is kale as I just have so much of it at the moment, I am eating it for breakfast, lunch and dinner. I also managed to get my hands on some organic blueberries first thing this morning so they too went in today's smoothie. I usually make my smoothies with almond milk, coconut milk or coconut water. Lately I have been buying cartons of almond milk, just because I have gotten out of the habit of making my own. However, almond milk is really easy to make and super tasty. I must put the directions for making it up on the blog in the next few days. Of course if you don't have time to make it, you can buy cartons of almond milk in most supermarkets and health food stores.
Just a quick reminder of why I love kale. One cup of kale contains only 34 calories, but contains an abundance of essential vitamins and minerals. Just one cup of kale contains 684 percent of the Vitamin K we need each day, 206 percent the Vitamin A and 134 percent of the Vitamin C. It is also a good source of calcium, manganese, potassium and copper.
This smoothie is not as filling as some of my other smoothies so if I was having it for breakfast, I would need to eat something along with it to keep me going.
Ingredients:
1 and a half cups of almond milk
Half a banana
Half a cup of blueberries
1 cup of kale leaves
1 tablespoon of almond butter
1 teaspoon of honey
Method:
Add all of the ingredients to a blender and blend until smooth. This smoothie is best drank immediately after making it.
