Recipe: Super Green Juice

First up, to make this juice you will need a juicer. I have a Greenstar twin geared juicer and love it. If you are thinking of investing in a juicer, I would really recommend buying a masticating juicer. I find they juice leafy greens really well and as they don't use heat to juice, vital nutrients and enzymes are not destroyed in the juicing process. I absolutely love green juices. I have at least one a day and sometimes two. Even when I am away on holidays, I try to find a juice shop close by so I don't miss out. Last summer I was in Paris for a few days and ended up renting an apartment on AirBnB because it was pretty much next door to cold pressed juice bar called 'Juice It'. I would definitely recommend this juice bar if you are in or around the 1st Arrondisement in Paris. It's lcoated on Rue de la Vrillière. Speaking of Paris, a great spot for vegan eating is Bob's Kitchen on Rue 74 Rue des Gravillier in the 3rd Arronsdisement.

Anyway I am totally gone off on a Paris tangent, so let me get back to the juice in hand. The reasons I love this juice is because of the abundance of nutrients it contains. It is so fantastic to be able to get all of this goodness in one glass of green juice. So worth the little effort it takes to make it.
Check out a quick summary of the nutrients contained in each of the ingredients:
Rainbow chard: Great source of dietary fibre, iron, vitamins A and K and anti-oxidants.
Celery: High water content, a good source of vitamins A and K and also contains potassium and calcium.
Cucumber: High water content, a good source of vitamin K and also contains phosphorus, magnesium and calcium.
Apple: Good source of dietary fibre and vitamin C.
Lemon: Lemon is alkalining when ingested. A good source of vitamin C and anti-oxidants.
Radish sprouts: Excellent source of vitamin C, some B vitamins, folate and manganese. Check out my blog post on the 'Health Benefits of Sprouts'.
How great is it, being able to get all of this goodness in just one glass of juice?!
Ingredients:
10 leaves of rainbow chard
5 stalks of celery
1/2 cucumber
1/2 apple
1 lemon
handful of radish sprouts
Method:
Wash the chard, celery, cucumber and apple and remove the skin from the lemon.
Roughly chop the cucumber, apple and lemon, just enough so that the pieces fit through the juicer. There is no need to chop the ingredients too small or to peel the ingredients, save for the lemon.
Feed the ingredients through your juicer, one at a time.
Stir the juice once finished. The juice is best served immediately, but will keep for about a day provided you store it in a glass airtight container in the fridge.
The juice will separate after a few minutes, so stir it before drinking.
