PINEAPPLE, CORIANDER & LIME GREEN SMOOTHIE


Pineapple, Coriander & Lime Green Smoothie

Do people still make green smoothies? I wasn’t sure and so I conducted a little Insta-research and it turns out that there are still a few of you out there, blending away and downing your green concoctions with delight. Just the excuse I need to post a new smoothie recipe.


Most green smoothie drinkers are after an extra dose of green vegetables and taste is an after-thought. Having said that if I can consume healthy leafy greens and a tasty smoothie at the same time, I’m more than down with that. For summer, the addition of frozen pineapple cubes adds a tropical vibe to a basic green smoothie. Make it extra with some fresh coriander and a squeeze of lime juice.


Let’s talk practicalities. Frozen fruit and vegetables work great in smoothies and can be bought ready frozen in most supermarkets. Think frozen spinach, pineapple, banana, mango, berries, etc. You can even buy many of our most used herbs frozen. It’s also a good idea to freeze any fresh vegetables you have at home if you think they’ll go bad before you have a chance to eat them. Think of the food waste that you will cut down on. For this recipe, I use fresh spinach, cucumber and coriander and frozen banana and pineapple. Coriander grows really well in pots and it’s worth picking up a plant in your local garden centre to have fresh coriander on hand all summer long.


I used chia seeds to thicken the smoothie. They thicken when soaked in liquid so work well to add substance to a smoothie. This smoothie can be made up to 24 hours before drinking. Just keep in the fridge in an airtight container and shake well before drinking.

Green smoothie ingredients

Pineapple, Coriander & Lime Green Smoothie


Serves 1-2


Ingredients


1 cup unsweetened coconut milk

Large handful of spinach

¼ cucumber chopped

1 banana, sliced and frozen

1 cup pineapple chunks, frozen

2 sprigs fresh coriander leaves

Juice of half a lime

1 tbsp chia seeds


Method


Place all the ingredients in a blender and blend into a smoothie. If the smoothie is too thick, add a little extra coconut milk or water to achieve your preferred consistency.
