Grapefruit and Pomegranate Prosecco

Say hi to summer with this ultra refreshing drink and it could not be simpler to make. I am a complete light weight when it comes to alcohol and get the worst hangovers. It's so difficult to find a refreshing drink that tastes great, has a little hint of alcohol but isn't laden with it and is low in sugar. BTW, total gap in the market here for any food and drink producers out there.

The only thing for it is to make your own.... plus it's lots of fun. I did some experimenting in this department during the week when I had friends over for dinner and thankfully this was one experiment that worked. (YAH!!).... not all of them do. Taking two of my favourites; grapefruit and pomegranate and adding sparkling water and prosecco can only result in good things happening.

And voilà...the party-perfect summer drink for any light drinks who want just a little kick of alcohol without the hangover. And just in time for the warm weather forecast for next weekend. Bottoms up!

Makes 8.

Ingredients

1 pomegrante, seeds only

2 grapefruit, peeled

1 bottle of sparkling wine

1 litre bottle of sparkling mineral water

To serve:

Ice cubes

Small handful of mint, finely chopped

1 grapefruit cut into wedges

Pomegranate seeds

Method

In a blender, blend the pomegranate seeds (set aside a few for serving) with the grapefruit segments and a splash of mineral water. Strain through a fine sieve or muslin cloth so that you are left with the juice and discard any pulp.

Add the pomegranate and grapefruit juice to a large pitcher and add the mineral water and prosecco and mix well.

To serve, place a few ice cubes in the bottom or the glass and top with the pomegranate and grapefruit prosecco mixture. To garnish, add a wedge of grapefruit, a few pomegranate seeds and some chopped mint. Enjoy x
