Recipe: 'No Nut' Energy Balls

Hi everyone. Today's recipe is a day late. Sorry, I was feeling a little under the weather yesterday, but thankfully I'm coming round now. I made these energy balls the other evening, as a few people asked me to post a nut free energy ball as they have nut allergy sufferers in the house. My usually energy balls have almonds and nut butter so are not suitable for many nut allergy sufferers. Of course if you are making this for an allergy sufferer, it's essential to check that they don't have an allergy to any of the other ingredients. Even if you don't have a nut allergy, these energy balls make a nice change from the usual nut ones.
Thankfully, this energy ball recipe is just as easy to make as the nut containing one. This recipe makes about 15 little energy balls.
Ingredients:
2 cups of dates, pitted and soaked in warm water for 30 minutes
1 and a half cups of oats
3 tbsp of pumpkin seeds
2 tbsp of raw cacao
2 tsp of vanilla extract
Pinch of sea salt
Method:
1. Place the dates in a food processor and process until they are broken down into paste.
2. Add the remaining ingredients and process until the ingredients are broken down and the mixture forms into a dough.
3. Using clean hands, form the mixture into roughly 15 balls. Place on a lined tray in the freezer.
4. Keep the balls in a container in the freezer and remove as you eat them. They should keep in the freezer for up to three months.
